Cobble Lane’s British Coppa is gently aged for up to five months, allowing deep, fruity flavours to develop and a beautifully soft, marbled texture to form. The result is a delicately balanced, melt-in-the-mouth cut that captures the essence of traditional craftsmanship.
Producer story
Cobble Lane specialise in small-batch British charcuterie made with patience and respect for provenance. Using retired British breeding sows typically 4–5 years old, they work with collars that are twice the size and carry double the marbling of standard pork. This exceptional quality makes for richer, more complex flavour and texture. Traditionally these cuts were exported to Europe, but Cobble Lane champion their use right here in the UK, ensuring truly local excellence.
