Inspired by the French Morbier but rooted in the pastures of the Cotswolds, Ashcombe is a beautifully balanced cheese, handcrafted by David Jowett at King Stone Dairy. Its golden, supple paste is divided by a dramatic line of edible wood ash—a nod to tradition and visual intrigue.
The washed rind develops subtle mushroomy aromas, giving way to flavours that are buttery, gently savoury, and milky with a soft lactic tang. Its texture is bouncy yet yielding, with a glossy creaminess that melts on the tongue. Elegant and understated, Ashcombe is a celebration of pastoral British cheesemaking with Continental flair.
