Westcombe Cheddar – Aged 12–18 Months in Somerset
Raw-milk Cheddar with a rich, nutty tang and traditional clothbound heritage.

Hailing from the lush hills of Somerset, Westcombe Cheddar is a celebrated expression of traditional British farmhouse craftsmanship. Made with raw milk and matured in open-air aging rooms, it boasts a deep, savoury complexity with a satisfyingly crumbly texture.
Each wheel is clothbound and turned by hand over many months to develop its signature balance—creamy on the palate yet edged with a piquant, almost brothy sharpness. A subtle mineral tang hints at the local terroir, while a long, nutty finish rounds out this Cheddar’s bold but refined character.
An essential for purists, it’s a slow-crafted tribute to Somerset’s historic cheesemaking roots.
Pairing Suggestions
• Wine: Mature Rioja or an English sparkling white
• Charcuterie: Superb with Scottish venison chorizo or Suffolk pastrami
• Accompaniments: Pickled walnuts, farmhouse chutney, or apple slices
