A five-tier celebration cheese cake featuring some of the best organic cheeses from around the United Kingdom and Ireland. Serving approximately 115 to 130 people, this cake includes from base to top:
Ashcombe - (P) Cow's Milk - Made by David Jowett in Chedworth, Gloucestershire
A rich yet subtle cheese. The mild and mushroomy rind gives way to a golden paste shot through with a line of wood ash. The flavours are milky and mild and the texture is bouncy, buttery and semi-firm. 6.2kg
Colston Bassett Stilton– (T)(P) Cow’s Milk - Made by Billy Kevan in Nottinghamshire
A blue for those who 'don't like blues' – A rich and creamy Stilton, with a buttery, lingering, complex flavour - Gentler, sweeter and more balanced than a ‘typical’ blue. 3.8kg
Berkswell - Sheep's Milk - Made by Julie Hay near Berkswell, West Midlands
Berkswell is a hard ewe’s milk cheese with a complex sweetness. Its gentle tang and slightly granular texture often draw comparisons with the Spanish cheese Manchego. 2kg
Ragstone - (P) Goat's Milk - Made by Charlie Westhead in Dorstone, Herefordshire
A soft, matured goat’s cheese with a densely fudgy texture and lactic, lemony flavours reminiscent of crème fraiche. 0.4kg
Dorstone - (P) Goat's Milk - Made by Charlie Westhead in Dorstone, Herefordshire
This turret-shaped goat’s cheese combines a light, fluffy texture with bright, citrusy flavours and a gentle acidity. 0.18kg
