Hugues Goisot’s Bourgogne Aligoté is an exceptionally refined example of Burgundy’s often-overlooked white grape. Farmed biodynamically, the grapes achieve excellent ripeness while maintaining bright acidity. Fermented with native yeasts and aged on lees in tank and older barrels, the wine reveals citrus, green apple, and subtle floral notes. A mineral-driven palate with crisp structure makes it both refreshing and quietly complex. Goisot’s meticulous vineyard work elevates Aligoté to a serious, terroir-driven wine suitable for pairing with seafood, light dishes, or as an aperitif.
