Handcrafted on the banks of the River Waveney in Suffolk, Baron Bigod is Britain’s answer to the great Brie de Meaux—made with milk from a single herd of Montbéliarde cows. Beneath its delicate bloomy rind lies a golden, gooey core that ripens to a luscious, spoonable texture.
The flavour profile is nuanced and elegant: clean, lactic brightness leads, giving way to mushroomy, vegetal notes and a savoury, creamy richness. Aged with precision and care, this cheese evolves beautifully, becoming increasingly unctuous and complex over time.
Baron Bigod is a true farmhouse Brie with a noble name and a cult following.
