This mature version of Sparkenhoe Red Leicester is a robust, full-bodied expression of England’s only raw milk Red Leicester. Handcrafted by the Clarke family in the heart of Warwickshire, it’s matured for at least a year to coax out rich umami undertones and deepen its naturally sweet, nutty profile.
The extended aging intensifies its flavour—think meaty, brothy richness with subtle caramelised notes—while the texture shifts from supple to satisfyingly crunchy, dotted with natural crystals that give it an almost cheddar-like snap.
Its deep russet-orange hue, achieved with natural annatto, speaks to its heritage. This is Red Leicester redefined: bold, complex, and uncompromisingly traditional.
